Stuffed Pepper Casserole

This Stuffed Pepper Casserole brings all the flavours of stuffed peppers into one deliciously easy-to-make dish. The rich ground beef, fragrant herbs, and tender bell peppers combine to create a comforting meal that’s perfect for any occasion.

  1. Ingredients:
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 500g ground beef (or turkey for a lighter option)
  • 1 can (400g) diced tomatoes
  • 1 cup long-grain white rice, cooked
  • 1 cup bell peppers, chopped (use a mix of red, yellow, and green)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 150g shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Directions:

  1. Preheat the oven to 180°C (160°C fan) / 350°F and grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking for 3-4 minutes, until softened.
  3. Add the ground beef (or turkey) to the skillet and cook until browned, breaking it up into small pieces as it cooks.
  4. Stir in the diced tomatoes, cooked rice, chopped bell peppers, oregano, basil, paprika, salt, and pepper. Cook for 5 minutes, allowing the flavours to combine.
  5. Transfer the mixture into the prepared baking dish and spread evenly.
  6. Sprinkle the mozzarella and Parmesan cheeses on top of the casserole.
  7. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and golden, and the casserole is bubbling.
  8. Let the casserole cool for a few minutes before serving.
