This Stuffed Pepper Casserole brings all the flavours of stuffed peppers into one deliciously easy-to-make dish. The rich ground beef, fragrant herbs, and tender bell peppers combine to create a comforting meal that’s perfect for any occasion.
- Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 500g ground beef (or turkey for a lighter option)
- 1 can (400g) diced tomatoes
- 1 cup long-grain white rice, cooked
- 1 cup bell peppers, chopped (use a mix of red, yellow, and green)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 150g shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Directions:
- Preheat the oven to 180°C (160°C fan) / 350°F and grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking for 3-4 minutes, until softened.
- Add the ground beef (or turkey) to the skillet and cook until browned, breaking it up into small pieces as it cooks.
- Stir in the diced tomatoes, cooked rice, chopped bell peppers, oregano, basil, paprika, salt, and pepper. Cook for 5 minutes, allowing the flavours to combine.
- Transfer the mixture into the prepared baking dish and spread evenly.
- Sprinkle the mozzarella and Parmesan cheeses on top of the casserole.
- Bake in the preheated oven for 25-30 minutes, until the cheese is melted and golden, and the casserole is bubbling.
- Let the casserole cool for a few minutes before serving.
