Ingredients:
- 2 tablespoons olive oil
- 2 pounds beef chuck, cut into 1-inch cubes
- 2 large onions, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons sweet Hungarian paprika
- 1 teaspoon smoked paprika
- 1 teaspoon caraway seeds
- 3 tablespoons tomato paste
- 1 red bell pepper, diced
- 4 cups beef broth
- 2 medium potatoes, peeled and diced

Directions:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
- In the same pot, sauté the onions until golden and soft, about 5-7 minutes. Add the garlic and cook for 1 more minute.
- Stir in the sweet paprika, smoked paprika, and caraway seeds, cooking for 30 seconds to release their aroma.
- Add the tomato paste and red bell pepper, stirring to combine. Return the beef to the pot.
- Pour in the beef broth, ensuring the beef is covered. Bring to a boil, then reduce the heat to low and simmer, covered, for 1 hour.
- Add the potatoes and carrots, and season with salt and pepper. Continue to simmer, uncovered, for an additional 30-40 minutes, or until the vegetables and beef are tender.
- Adjust seasoning if needed, and garnish with fresh parsley before serving.
