Hungarian Goulash with Tender Beef

Ingredients:

  • 2 tablespoons olive oil
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 large onions, finely chopped

  • 1 teaspoon smoked paprika
  • 1 teaspoon caraway seeds
  • 3 tablespoons tomato paste
  • 1 red bell pepper, diced
  • 4 cups beef broth
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
  2. In the same pot, sauté the onions until golden and soft, about 5-7 minutes. Add the garlic and cook for 1 more minute.
  3. Stir in the sweet paprika, smoked paprika, and caraway seeds, cooking for 30 seconds to release their aroma.
  4. Add the tomato paste and red bell pepper, stirring to combine. Return the beef to the pot.
  5. Pour in the beef broth, ensuring the beef is covered. Bring to a boil, then reduce the heat to low and simmer, covered, for 1 hour.
  6. Add the potatoes and carrots, and season with salt and pepper. Continue to simmer, uncovered, for an additional 30-40 minutes, or until the vegetables and beef are tender.
  7. Adjust seasoning if needed, and garnish with fresh parsley before serving.
