Beef and Pepper Rice Bowls are the ultimate quick and satisfying meal for busy weeknights. Juicy, seasoned ground beef combines beautifully with crisp bell peppers and a savory sauce, all served over a bed of fluffy rice.
Ingredients:
- 1 lb ground beef
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 cups cooked white or brown rice
- 2 tablespoons green onions, chopped (for garnish)
- Sesame seeds (optional, for garnish)
Directions:
- Heat a large skillet or wok over medium-high heat. Add sesame oil and ground beef. Cook, breaking the meat into small pieces, until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add the garlic, onion, and bell peppers. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Return the cooked beef to the skillet. Stir in soy sauce, hoisin sauce, and crushed red pepper flakes (if using). Mix until evenly coated.
- Add the cornstarch mixture and stir well. Cook for another 2-3 minutes until the sauce thickens slightly.
- Serve the beef and pepper stir-fry over warm cooked rice. Garnish with green onions and sesame seeds, if desired.
