Beef and Pepper Rice Bowls are the ultimate quick and satisfying meal for busy weeknights. Juicy, seasoned ground beef combines beautifully with crisp bell peppers and a savory sauce, all served over a bed of fluffy rice.

Ingredients:

  • 1 lb ground beef
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 cups cooked white or brown rice
  • 2 tablespoons green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Directions:

  1. Heat a large skillet or wok over medium-high heat. Add sesame oil and ground beef. Cook, breaking the meat into small pieces, until browned and cooked through. Remove from skillet and set aside.
  2. In the same skillet, add the garlic, onion, and bell peppers. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  3. Return the cooked beef to the skillet. Stir in soy sauce, hoisin sauce, and crushed red pepper flakes (if using). Mix until evenly coated.
  4. Add the cornstarch mixture and stir well. Cook for another 2-3 minutes until the sauce thickens slightly.
  5. Serve the beef and pepper stir-fry over warm cooked rice. Garnish with green onions and sesame seeds, if desired.
