Chicken Broccoli Alfredo is the epitome of comfort food, blending tender chicken, vibrant broccoli, and a rich, creamy Parmesan Alfredo sauce with perfectly cooked pasta. This dish is simple yet indulgent, making it an ideal choice for any occasion.
Ingredients:
- 12 oz fettuccine or pasta of choice
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup milk
- 1 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1/2 teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Directions:
- Cook the pasta in a large pot of salted boiling water until al dente. During the last 3 minutes of cooking, add the broccoli florets to the boiling water. Drain the pasta and broccoli, reserving 1/2 cup of pasta water. Set aside.
- Heat olive oil in a large skillet over medium heat. Add the chicken, season with salt and pepper, and cook for 5-7 minutes, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter and sauté the garlic for 1-2 minutes until fragrant.
- Stir in the heavy cream, milk, Parmesan cheese, and Italian seasoning. Cook over low heat, stirring occasionally, until the sauce thickens, about 5 minutes.
- Add the cooked pasta, broccoli, and chicken to the skillet. Toss gently to coat everything in the creamy Alfredo sauce. If needed, add a splash of reserved pasta water to adjust the sauce consistency.
- Garnish with fresh parsley and serve warm.
