Chicken and Broccoli Alfredo Pasta

Ingredients:

  • 12 oz fettuccine or pasta of choice
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Cook the pasta in a large pot of salted boiling water until al dente. During the last 3 minutes of cooking, add the broccoli florets to the boiling water. Drain the pasta and broccoli, reserving 1/2 cup of pasta water. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken, season with salt and pepper, and cook for 5-7 minutes, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the butter and sauté the garlic for 1-2 minutes until fragrant.
  4. Stir in the heavy cream, milk, Parmesan cheese, and Italian seasoning. Cook over low heat, stirring occasionally, until the sauce thickens, about 5 minutes.
  5. Add the cooked pasta, broccoli, and chicken to the skillet. Toss gently to coat everything in the creamy Alfredo sauce. If needed, add a splash of reserved pasta water to adjust the sauce consistency.
  6. Garnish with fresh parsley and serve warm.
