Taco Pie

  1. Ingredients:
    • 1 lb ground beef
    • 1 small onion, chopped
    • 1 packet taco seasoning
    • 1 can (15 oz) refried beans
    • 1 cup salsa
    • 1 cup shredded cheddar cheese
    • 1 cup sour cream
    • 1 pre-made pie crust (or 2 if making a top crust)
    • 1 cup shredded lettuce
    • 1 tomato, diced
    • 1/4 cup sliced black olives (optional)
    • Fresh cilantro for garnish (optional)
    Directions:
    1. Preheat the oven to 375°F (190°C).
    2. In a skillet over medium heat, brown the ground beef and chopped onion until the beef is cooked through. Drain excess fat.
    3. Stir in the taco seasoning, refried beans, and salsa. Cook for an additional 5 minutes until heated through.
    4. Roll out the pie crust and fit it into a 9-inch pie dish. Pour the beef mixture into the crust, spreading it evenly.
    5. Top with shredded cheddar cheese and dollop sour cream on top.
    6. If using a second pie crust, place it over the filling and cut slits for ventilation. If not, skip this step.
    7. Bake for 25-30 minutes, or until the crust is golden brown and the cheese is bubbly.
    8. Remove from the oven and let cool for a few minutes. Top with shredded lettuce, diced tomato, black olives, and garnish with cilantro before serving.
