Ingredients
- 2 pounds lean ground beef
- 2 (1.25 oz) packets taco seasoning mix
- 4 cloves garlic, minced
- 1 tablespoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/2 cup water
- Cooking spray
- 18 (6-inch) corn tortillas
- 1 (24 oz) jar salsa
- 1 cup sliced green onion
- 1 (16 oz) container sour cream
- 1 1/2 cups shredded Cheddar cheese
- 1 1/2 cups shredded Monterey Jack cheese
Directions
- Cook ground beef in a large skillet over medium-high heat until browned; drain.
- Stir in taco seasoning, garlic, chili powder, cayenne, and water; reduce heat and simmer 10 minutes.
- Preheat oven to 375°F and spray a 9×13-inch baking dish.
- Layer 6 tortillas in the dish, then spread with 1/3 of the salsa.
- Add half the meat mixture, half the green onions, and dollops of half the sour cream.
- Sprinkle with 1/2 cup Cheddar and 1/2 cup Monterey Jack.
- Repeat layers.
- Finish with 6 tortillas, the remaining salsa, and all remaining cheese.
- Bake 30–45 minutes, until the top is golden and cheese is fully melted.
