Ingredients

  • 2 pounds lean ground beef
  • 2 (1.25 oz) packets taco seasoning mix
  • 4 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup water
  • Cooking spray
  • 18 (6-inch) corn tortillas
  • 1 (24 oz) jar salsa
  • 1 cup sliced green onion
  • 1 (16 oz) container sour cream
  • 1 1/2 cups shredded Cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese

Directions

  1. Cook ground beef in a large skillet over medium-high heat until browned; drain.
  2. Stir in taco seasoning, garlic, chili powder, cayenne, and water; reduce heat and simmer 10 minutes.
  3. Preheat oven to 375°F and spray a 9×13-inch baking dish.
  4. Layer 6 tortillas in the dish, then spread with 1/3 of the salsa.
  5. Add half the meat mixture, half the green onions, and dollops of half the sour cream.
  6. Sprinkle with 1/2 cup Cheddar and 1/2 cup Monterey Jack.
  7. Repeat layers.
  8. Finish with 6 tortillas, the remaining salsa, and all remaining cheese.
  9. Bake 30–45 minutes, until the top is golden and cheese is fully melted.
