Strawberry Coconut Balls
These strawberry coconut balls are sweet, chewy little bites with pops of fresh strawberry and a rich coconut base. They come together quickly with just three main ingredients and no baking at all. They’re perfect for summer gatherings, after-school treats, or when you want something pretty and colorful on a dessert table. Because they’re chilled, they’re especially refreshing on warm days. Make a batch ahead of time and keep them in the fridge for an easy grab-and-go treat.

Ingredients
- 2 cups desiccated coconut, plus extra for rolling
- 1/2 cup condensed milk
- 1 cup fresh strawberries, finely chopped
Directions
- Finely chop the fresh strawberries until you have 1 cup, then place them in a large mixing bowl.
- Add 2 cups of desiccated coconut to the bowl with the strawberries.
- Pour in 1/2 cup of condensed milk and stir until everything is well combined and a sticky dough forms; if the mixture seems too wet, sprinkle in a little more coconut.
- Scoop out small portions of the mixture and roll them between your palms to form balls about 1 inch in diameter.
- Roll each ball in extra desiccated coconut until fully coated, then place them on a plate or baking sheet.
- Refrigerate the strawberry coconut balls for at least 1 hour to set, then serve chilled.

Tips
