S’mores Cookie Bars

Ingredients:

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups graham cracker crumbs
  • 1 1/2 cups milk chocolate chips
  • 1 1/2 cups mini marshmallows
  • 4 full-size Hershey’s chocolate bars, broken into pieces
  • 2 graham crackers, broken into pieces for topping

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Spread half of the cookie dough into the prepared pan, pressing it into an even layer.
  7. Sprinkle the milk chocolate chips and mini marshmallows evenly over the dough. Place the broken Hershey’s chocolate pieces on top.
  8. Drop spoonfuls of the remaining cookie dough over the top and gently spread to cover the marshmallow and chocolate layers. It’s okay if some marshmallows peek through.
  9. Scatter the broken graham cracker pieces on top.
  10. Bake for 25-30 minutes, or until the bars are golden brown and the marshmallows are slightly toasted.
  11. Let the bars cool in the pan for at least 20 minutes before slicing and serving.
