Tips
For the best texture, use cold, leftover rice (fresh rice can turn mushy in the skillet).
Let the fried rice cool for 10–15 minutes before storing; refrigerate in an airtight container and reheat in a skillet for the best flavor.
FAQ
Can I use freshly cooked rice?
Yes, but spread it on a tray and cool it for 15–20 minutes first so it doesn’t clump or get soggy.
Do I have to thaw the peas and carrots?
It helps them heat evenly and prevents extra water from steaming the rice, but you can toss them in frozen—just cook a minute or two longer.
Can I swap the shrimp for another protein?
Absolutely—chicken, ham, or tofu all work the same way; just cook the protein through before adding the rice.
How long does shrimp fried rice keep?
Stored airtight in the fridge, it’s best within 2–3 days; reheat until steaming hot.
