Sheet Pan Quesadillas

These Sheet Pan Quesadillas are the easiest way to make a crispy, cheesy, flavor-packed meal for a crowd. Loaded with seasoned beef, sautéed peppers and onions, and plenty of melted cheese, they bake up perfectly golden in the oven—no flipping required. Ingredients

  • 1 tablespoon olive oil
  • 2 bell peppers, chopped
  • 1 onion, chopped
  • 1 1/2 lb ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Ground black pepper, to taste
  • 8 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 green onions, thinly sliced
  • Sour cream, for garnish
  • Pico de gallo, for garnish

Directions

  1. Preheat oven to 425°F.
  2. Heat olive oil in a large skillet over medium heat. Cook onions and peppers until softened, about 5 minutes; remove and set aside.
  3. Brown ground beef in the same skillet, breaking it up as it cooks; drain excess fat.
  4. Stir in chili powder, cumin, paprika, salt, and pepper.
  5. Arrange 6 tortillas on a baking sheet, overlapping to cover the bottom completely; place another tortilla in the center if needed.
  6. Spread the cooked ground beef evenly over the tortillas.
  7. Add the pepper–onion mixture, followed by cheddar, Monterey Jack, and green onions.
  8. Fold the edges of the tortillas inward, then place the final tortilla on top.
  9. If needed, place a second baking sheet on top for the first 10 minutes to help hold shape.
  10. Bake 25–35 minutes, removing the top sheet after 10 minutes, until tortillas are crisp and golden.
  11. Slice into rectangles and serve warm with sour cream and pico de gallo.
