- Ingredients:
- 1 lb ground beef or ground turkey
- 1 small onion, chopped
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) diced tomatoes, drained
- 1 can (4 oz) diced green chilies (optional)
- 1 cup frozen corn kernels
- 1 cup black beans, drained and rinsed
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded Mexican blend cheese
- 1/2 cup sour cream
- 1 bag tortilla chips, crushed
- 1/2 cup green onions, chopped (for garnish)
- Fresh cilantro (optional, for garnish)
Directions:
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or a little oil.
- In a large skillet, cook the ground beef or turkey over medium heat, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes.
- Add the chopped onion to the skillet and sauté for 2-3 minutes, until softened.
- Stir in the taco seasoning and water, cooking for 1-2 minutes until the mixture thickens.
- Add the diced tomatoes, green chilies (if using), corn, and black beans to the skillet. Stir to combine and cook for another 3-4 minutes.
- Pour the beef mixture into the prepared baking dish, spreading it out evenly.
- Layer the crushed tortilla chips on top of the beef mixture, followed by a generous sprinkle of cheddar cheese and Mexican blend cheese.
- Bake the casserole in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
