  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 2 1/2 cups shredded mozzarella cheese, divided
  • 1/2 cup shredded parmesan cheese

Directions

  1. Heat olive oil in a large pot over medium heat; sauté onion 3–4 minutes.

  3. Add sausage, crumble, and cook until browned; drain excess grease.

  5. Meanwhile, boil pasta until just shy of al dente; reserve 1 cup pasta water and drain.
  6. Add pasta to sauce with 1 1/2 cups mozzarella and 1/2 cup pasta water; stir well. Add more pasta water only if needed.
  7. Preheat oven to 350°F.
  8. Transfer mixture to a 9×13-inch baking dish; top with remaining mozzarella and parmesan.
  9. Bake 25–30 minutes until bubbling and golden.
