Old Fashioned Banana Pudding

  1. Ingredients:
    • 1 cup granulated sugar
    • 1/3 cup all-purpose flour
    • 1/4 teaspoon salt
    • 2 3/4 cups whole milk
    • 3 large egg yolks, beaten
    • 1 teaspoon vanilla extract
    • 4 ripe bananas, sliced
    • 1 box (11 oz) vanilla wafers
    • 1 cup heavy whipping cream
    • 2 tablespoons powdered sugar
    Directions:
    1. In a saucepan, whisk together the sugar, flour, and salt. Gradually stir in the milk over medium heat.
    2. Cook, stirring constantly, until the mixture thickens and comes to a gentle boil. This should take about 10 minutes.
    3. Stir a small amount of the hot mixture into the beaten egg yolks, then return everything to the saucepan. Cook for an additional 2 minutes, stirring constantly.
    4. Remove from heat and stir in the vanilla extract.
    5. In a 2-quart dish, layer half of the vanilla wafers, half of the banana slices, and half of the pudding mixture. Repeat with the remaining wafers, bananas, and pudding.
    6. Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
    7. Before serving, whip the heavy cream with the powdered sugar until soft peaks form. Spread the whipped cream over the top of the pudding.
