Loaded Steak Quesadillas
These loaded steak quesadillas are crispy on the outside, melty in the middle, and packed with savory seasoned sirloin plus tender peppers and onions. Provolone gives them that stretchy, gooey bite that pairs perfectly with bold steak seasoning and a little cayenne heat. They’re fast enough for a weeknight but feel like a fun “takeout-style” meal at home. Slice them into wedges for sharing, dipping, and snacking. Add your favorite toppings—salsa, sour cream, or guac—and you’re set.

Tips
Slice the sirloin very thin (against the grain) so it sears quickly and stays tender inside the quesadilla.
Keep finished quesadillas warm on a baking sheet in a 200°F oven while you cook the rest, and store leftovers in the fridge up to 3 days (re-crisp in a skillet).
FAQ
Can I use a different cut of beef?
Yes—flank steak or skirt steak work great; just slice thinly against the grain.
How spicy are these with cayenne?
Moderately spicy; reduce the cayenne or use none if you want them mild.
Can I use shredded cheese instead of slices?
Yes—provolone slices melt nicely, but shredded provolone or a blend works too.
What should I serve with steak quesadillas?
Salsa, sour cream, guacamole, and a simple side like rice or a salad are all great.
