Leftover Turkey Stuffing Balls

Ingredients:

  • 3 cups leftover stuffing
  • 2 cups shredded leftover turkey
  • 1/2 cup cranberry sauce (optional)
  • 1/2 cup shredded cheddar cheese
  • 2 large eggs
  • 1/2 cup breadcrumbs (plus more if needed)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Oil for frying or baking spray

For the Gravy Dipping Sauce:

  • 1 cup leftover gravy, warmed
  • 1 tablespoon chopped parsley (optional)

Directions:

  1. In a large bowl, combine the leftover stuffing, shredded turkey, cranberry sauce (if using), cheese, eggs, breadcrumbs, black pepper, and garlic powder. Mix until well incorporated and the mixture holds together.
  2. Scoop about 2 tablespoons of the mixture and roll it into a ball. Repeat until all the mixture is used. If the mixture is too wet, add more breadcrumbs.
  3. To Fry:
    • Heat oil in a deep skillet to 350°F (175°C). Fry the balls in batches for 3-4 minutes, or until golden brown. Drain on paper towels.
  4. To Bake:
    • Preheat the oven to 400°F (200°C). Place the balls on a baking sheet lined with parchment paper and spray with baking spray. Bake for 18-20 minutes, or until crispy and golden.
  5. Serve warm with gravy on the side for dipping, garnished with parsley if desired.
