Ingredients:
- 4 boneless, skinless chicken breasts
- 3 large tomatoes, diced
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- Fresh basil for garnish
Directions:
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the diced tomatoes, minced garlic, olive oil, dried basil, oregano, garlic powder, salt, and pepper.
- Place the chicken breasts in a baking dish and season with salt and pepper.
- Spoon the tomato and garlic mixture over the chicken breasts, making sure they are well covered.
- Bake the chicken for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
