They’re perfect for game day, parties, or an easy weeknight dinner when you want something fun and shareable. Serve them hot right out of the pan and watch them disappear.

Ingredients

  • 1 lb shaved roast beef
  • 2 tablespoons olive oil
  • 9 slices provolone cheese
  • 1 large bell pepper, chopped
  • 1/2 cup chopped onion
  • 4 tablespoons butter, divided
  • 2 tablespoons mayonnaise
  • 1 dozen dinner rolls
  • 2 tablespoons Everything Bagel Topping

Everything Bagel Topping:

  • 1/4 cup sesame seeds
  • 1/4 cup poppy seeds
  • 1/4 cup dried onion flakes
  • 1/4 cup black sesame seeds (optional)
  • 1 tablespoon garlic salt

Directions

  1. Preheat the oven to 350°F.
  2. In a small bowl, mix together the sesame seeds, poppy seeds, dried onion flakes, black sesame seeds (if using), and garlic salt to make the Everything Bagel Topping. Store any extra in an airtight container.
  3. In a separate small bowl, mix 2 tablespoons melted butter with 2 tablespoons of the Everything Bagel Topping; set aside.
  4. In a medium skillet over medium-high heat, melt 2 tablespoons butter. Add the chopped bell pepper and onion, and sauté until tender and slightly golden around the edges. Set aside.
  5. In a large skillet over medium-high heat, add the olive oil and the shaved roast beef. Cook until heated through and slightly browned in spots.
  6. Carefully slice the dinner rolls in half horizontally, keeping each set of rolls attached as one piece so you have a top and bottom slab.
  7. Place the bottom half of the rolls in a 9×13-inch baking pan and spread the mayonnaise evenly over the cut side.
  8. Spread the hot roast beef evenly over the rolls, then layer the provolone slices over the beef.
  9. Sprinkle the sautéed peppers and onions evenly over the cheese.
  10. Place the pan in the preheated oven and bake for 8–10 minutes, until the cheese is melted.
  11. Remove from the oven, add the top halves of the rolls, and brush the tops with the Everything Bagel butter mixture.
  12. Return to the oven and bake for an additional 5 minutes, or until the tops are lightly toasted.
  13. Remove from the oven and cut into individual sliders. Serve warm.

Tips

For the best texture, slice the rolls carefully so they stay in one big sheet—this makes it much easier to fill, bake, and then cut into neat sliders.

If you’re serving a crowd, you can assemble the sliders up to the point before baking, cover and refrigerate, then bake just before serving so they’re hot and melty.

FAQ

Can I use a different cheese instead of provolone?
Yes, mozzarella, white American, or pepper jack all work well and melt nicely over the beef.

Can I prep these sliders ahead of time?
You can cook the meat and vegetables and assemble the sliders earlier in the day, then cover and refrigerate. Bake right before serving, adding a few extra minutes if needed.

Can I use leftover steak instead of shaved roast beef?
Definitely. Thinly slice leftover steak and heat it in the skillet briefly before layering on the rolls.

What kind of rolls work best?
Soft dinner rolls or Hawaiian-style rolls are ideal because they stay tender and pull apart easily.

How do I keep the bottoms from getting soggy?
Spreading a thin layer of mayo and baking the sliders on a preheated oven rack helps; also, don’t let them sit too long in the pan after baking before serving.
