Crockpot Barbecue Ribs

Ingredients:

  • 3 lbs baby back ribs or St. Louis-style ribs
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup barbecue sauce (your favorite brand)
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/2 teaspoon liquid smoke (optional)

Directions:

  1. Remove the silver membrane from the back of the ribs for better seasoning and tenderness.
  2. In a small bowl, mix the smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Rub the spice blend all over the ribs, coating both sides.
  3. Place the ribs in the slow cooker, curving them to fit if necessary.
  4. In a separate bowl, mix the barbecue sauce, apple cider vinegar, brown sugar, and liquid smoke (if using). Pour the sauce evenly over the ribs.
  5. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the ribs are tender and easily pull away from the bone.
  6. Optional: For a sticky, caramelized finish, place the cooked ribs on a baking sheet, brush with extra barbecue sauce, and broil in the oven for 3-5 minutes.
  7. Serve hot with extra barbecue sauce on the side.
