Ingredients:
- 2 cups cooked, shredded chicken
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/4 cup cream cheese, softened
- 1/4 cup salsa
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 12 small flour or corn tortillas
- Cooking spray or 2 tablespoons vegetable oil
- Sour cream, guacamole, or salsa for serving
Directions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- In a mixing bowl, combine the shredded chicken, shredded cheese, cream cheese, salsa, cumin, chili powder, garlic powder, salt, and pepper. Mix until well blended.
- Warm the tortillas in the microwave for 20-30 seconds to make them pliable.
- Spoon about 2-3 tablespoons of the chicken mixture onto the lower third of each tortilla. Roll tightly and place seam-side down on the prepared baking sheet.
- Lightly spray or brush the tops of the taquitos with cooking spray or vegetable oil.
- Bake for 15-20 minutes, or until the tortillas are crispy and golden brown.
- Serve warm with your favorite dipping sauces, such as sour cream, guacamole, or salsa.
