Crispy Chicken Taquitos

Chicken Taquitos are the perfect combination of crispy, cheesy, and flavorful. Rolled tortillas stuffed with a savory chicken and cheese filling are baked to golden perfection for an irresistible snack, appetizer, or main dish.

Ingredients:

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/4 cup cream cheese, softened
  • 1/4 cup salsa
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 12 small flour or corn tortillas
  • Cooking spray or 2 tablespoons vegetable oil
  • Sour cream, guacamole, or salsa for serving

Directions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a mixing bowl, combine the shredded chicken, shredded cheese, cream cheese, salsa, cumin, chili powder, garlic powder, salt, and pepper. Mix until well blended.
  3. Warm the tortillas in the microwave for 20-30 seconds to make them pliable.
  4. Spoon about 2-3 tablespoons of the chicken mixture onto the lower third of each tortilla. Roll tightly and place seam-side down on the prepared baking sheet.
  5. Lightly spray or brush the tops of the taquitos with cooking spray or vegetable oil.
  6. Bake for 15-20 minutes, or until the tortillas are crispy and golden brown.
  7. Serve warm with your favorite dipping sauces, such as sour cream, guacamole, or salsa.
