- Ingredients:
- 1 lb Italian sausage (mild or spicy, based on preference)
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 medium russet potatoes, thinly sliced
- 6 cups chicken broth
- 1/2 cup heavy cream
- 3 cups kale, chopped
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
- Fresh Parmesan cheese, grated for garnish
- In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes).
