- In a separate large bowl, cream the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the eggnog and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar, eggnog, and nutmeg until smooth. Drizzle over the cooled bread.
