Christmas Eggnog Bread

  1. Ingredients:
    • 2 1/2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 teaspoon ground nutmeg
    • 1 teaspoon ground cinnamon
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 cup eggnog
    • 1 teaspoon vanilla extract
    • 1/2 cup chopped walnuts or pecans (optional)
    Glaze:
    • 1 cup powdered sugar
    • 2 tablespoons eggnog
    • 1/4 teaspoon nutmeg
    Directions:
    1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
    2. In a bowl, whisk together the flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
    3. In a separate large bowl, cream the softened butter and sugar until light and fluffy.
    4. Beat in the eggs one at a time, then stir in the eggnog and vanilla extract until well combined.
    5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the nuts if using.
    6. Pour the batter into the prepared loaf pan and smooth the top.
    7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
    8. For the glaze, whisk together the powdered sugar, eggnog, and nutmeg until smooth. Drizzle over the cooled bread.
