Chicken Noodles

Chicken and noodles is the kind of cozy, creamy comfort food that tastes like it’s been simmering all day (because it has!). This version uses a slow cooker to make tender shredded chicken in a rich, savory sauce, then the noodles cook right in the broth for an easy one-pot finish. It’s simple, filling, and perfect for busy weeknights or chilly days. You can use classic egg noodles, or swap in thicker Amish-style noodles for extra hearty texture. Serve it as-is or with a side of veggies for a complete meal.

Ingredients

  • 1 1/2–2 lb boneless, skinless chicken breasts
  • 2 cans cream of chicken soup
  • 1 tsp dried parsley
  • 1/2 tsp seasoned salt
  • 1/4 tsp poultry seasoning
  • 1 tsp garlic powder
  • 3/4 stick butter, sliced into pats
  • 3 1/2 cups chicken broth
  • 8 oz egg noodles, uncooked

Directions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Add the cream of chicken soup and sprinkle in parsley, seasoned salt, poultry seasoning, and garlic powder.
  3. Top with pats of butter and pour in chicken broth.
  4. Cook on LOW for 5–6 hours or HIGH for 3–4 hours.
  5. Remove chicken and shred with two forks.

  8. Cook an additional 30–45 minutes, stirring occasionally, until noodles are tender.

Tips

If you want thicker, heartier noodles, swap in Amish-style noodles—just expect them to take a bit longer to soften than egg noodles.

Stir once or twice while the noodles cook so they don’t clump, and store leftovers in the fridge (they’ll thicken as they sit—add a splash of broth when reheating).

FAQ

Can I use chicken thighs instead of breasts?
Yes—boneless, skinless thighs work great and stay extra juicy.

Do I have to cook the noodles separately?
No, they cook right in the slow cooker, which also helps thicken the sauce.

Why did my dish get too thick?
The noodles absorb broth as they sit; stir in more chicken broth when reheating to loosen it.

Can I freeze chicken and noodles?
It’s best fresh, but you can freeze it—just know the noodles may soften more after thawing and reheating.
