Chicken Broccoli Rice is the epitome of a comforting, all-in-one meal that’s both hearty and easy to prepare. The tender chicken, perfectly cooked rice, and vibrant broccoli come together in a dish that is as nutritious as it is delicious.
Ingredients:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 1/2 cups long-grain white rice
- 3 cups chicken broth
- 2 cups broccoli florets
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese (optional, for topping)
Directions:
- In a large pot or skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 4-5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Add the chicken pieces to the pot and cook until browned on all sides, about 6-7 minutes. Season with thyme, paprika, salt, and pepper.
- Stir in the rice, chicken broth, and broccoli florets. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
- If using, sprinkle shredded cheddar cheese on top of the chicken and rice mixture. Cover the pot for a few more minutes until the cheese is melted.
- Serve hot, garnished with additional herbs or seasonings if desired. Enjoy!
