Ingredients:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups long-grain white rice
  • 3 cups chicken broth
  • 2 cups broccoli florets
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (optional, for topping)

Directions:

  1. In a large pot or skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 4-5 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the chicken pieces to the pot and cook until browned on all sides, about 6-7 minutes. Season with thyme, paprika, salt, and pepper.
  4. Stir in the rice, chicken broth, and broccoli florets. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
  5. If using, sprinkle shredded cheddar cheese on top of the chicken and rice mixture. Cover the pot for a few more minutes until the cheese is melted.
