This Cheesy Mozzarella Chicken is the ultimate comfort food, combining tender chicken with gooey mozzarella and a crispy Parmesan topping. The flavours come together beautifully, creating a satisfying and indulgent dish that’s perfect for family dinners or special occasions.
- Ingredients:
- 4 boneless, skinless chicken breasts
- 200g mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (optional for a crispy topping)
- Fresh basil leaves (optional, for garnish)
Directions:
- Preheat your oven to 200°C (180°C fan) / 400°F. Grease a baking dish with a little olive oil or cooking spray.
- Cut a pocket in each chicken breast (be careful not to cut all the way through) and stuff each with a generous amount of mozzarella cheese.
- Season both sides of the chicken breasts with garlic powder, dried basil, dried oregano, salt, and pepper.
- Heat olive oil in a large ovenproof skillet over medium-high heat. Once hot, add the chicken breasts and cook for 2-3 minutes per side, until lightly browned.
- Sprinkle grated Parmesan cheese on top of each chicken breast and, if desired, add breadcrumbs for a crispy topping.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 75°C / 165°F) and the cheese is melted and bubbly.
- Garnish with fresh basil leaves before serving.
