Ingredients:

- 1 medium onion, chopped

- 4 cups broccoli florets
- 3 cups vegetable or chicken broth
- 1 1/2 cups whole milk
- 2 cups sharp cheddar cheese, shredded
- 1/2 cup heavy cream
- Salt and pepper, to taste
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon cornstarch (optional, for thickening)
Directions:
- In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5-6 minutes.
- Add the minced garlic and cook for another minute, until fragrant.
- Add the broccoli florets and vegetable broth to the pot. Bring to a simmer and cook for about 10-12 minutes, or until the broccoli is tender.
- Use an immersion blender or regular blender to blend the soup until smooth. (For a chunkier texture, you can blend half the soup and leave the rest as is.)
- Return the soup to low heat and stir in the milk and heavy cream. Cook for an additional 5-6 minutes to heat through.
- Gradually add the shredded cheddar cheese to the soup, stirring constantly until the cheese is fully melted and the soup is creamy.
- Season the soup with salt, pepper, and red pepper flakes, if using. If you prefer a thicker soup, mix the cornstarch with a little water and stir into the soup. Let it cook for a few more minutes to thicken.
