Blooming Quesadilla Ring
This blooming quesadilla ring is a cheesy, pull-apart party snack that disappears fast. Tortilla “cones” are stuffed with chicken, taco sauce, peppers, and melty cheese, then baked into a crisp, golden ring. It’s like a queso-and-quesadilla mashup with a fun presentation that’s perfect for game day, birthdays, or a shareable dinner. The center is made for dipping, so you can fill it with salsa, guacamole, or sour cream. Best of all, it’s easy to prep ahead and bake right before serving.

Ingredients
- 2 cups cooked, shredded chicken
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 jalapeño, chopped
- 1 cup taco sauce
- 20 taco-size tortillas
- 3 cups shredded cheddar cheese
- 3 cups shredded Monterey Jack cheese
Directions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- Mix chicken, onion, red bell pepper, jalapeño, and taco sauce in a large bowl.
- Cut each tortilla in half.
- Add about 2 tbsp cheddar, 2 tbsp Monterey Jack, and 2 tbsp chicken mixture to each tortilla half.
- Roll each tortilla half into a cone starting from the cut edge, keeping the filling tucked in.
- Place a wide-mouth jar or glass in the center of the baking sheet.
- Arrange about 13 cones in a ring around the jar with points facing inward, touching the jar, then sprinkle cheddar and Monterey Jack over the layer.
- Repeat with remaining cones to make 2 more layers, finishing with the rest of the cheeses.
- Remove the jar and bake 15–20 minutes until cheese is melted and tortilla edges are crispy.
- Transfer to a serving platter, fill the center with your dip of choice, add garnishes if you like, and serve immediately.

Tips
For the crispiest ring, use freshly shredded cheese (it melts better) and avoid overfilling the cones so they stay tightly rolled.
Let it cool for 3–5 minutes before moving it to a platter so the melted cheese firms up slightly; leftovers re-crisp well in the oven or air fryer.
