Apple Pie Biscuits

Ingredients:

  • Biscuits:
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 cup cold unsalted butter, cubed
    • 3/4 cup buttermilk
  • Apple Filling:
    • 3 apples (Granny Smith or Honeycrisp), peeled and diced
    • 1/3 cup granulated sugar
    • 1/4 cup brown sugar
    • 1 teaspoon cinnamon
    • 1/4 teaspoon nutmeg
    • 1 tablespoon lemon juice
    • 1 tablespoon unsalted butter
  • Glaze:
    • 1/2 cup powdered sugar
    • 2 tablespoons milk
    • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Make the biscuits: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk until just combined. Turn the dough onto a floured surface, knead lightly, and roll it out to 1/2-inch thickness.
  5. Use a biscuit cutter or glass to cut out 8 biscuits. Place them on the prepared baking sheet.
  6. Prepare the apple filling: In a saucepan over medium heat, melt the butter and add the diced apples, sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5-7 minutes until the apples are soft and the mixture thickens.
  7. Assemble the biscuits: Cut each biscuit in half, spoon some apple filling onto the bottom half, and cover with the top half. Gently press the edges to seal.
  8. Bake for 12-15 minutes or until the biscuits are golden brown.
  9. Make the glaze: Whisk together powdered sugar, milk, and vanilla extract. Drizzle over the warm biscuits and serve.
