You get all the good stuff: fluffy biscuits on top, creamy sausage gravy underneath, and a layer of soft, baked eggs tying it all together. It’s easy to throw together in the morning, but you can also prep parts of it ahead if you’ve got guests coming. This is the kind of breakfast that totally works for holidays, brunch, or a lazy Sunday. Serve it straight from the pan with some hot sauce on the side and you’re set.

Ingredients

  • 1 pound sausage
  • 1 package Pioneer Brand Peppered Sausage Gravy Mix
  • 1 cup water (for the gravy mix)
  • 1 cup cheddar cheese, shredded
  • 6 eggs
  • 1/2 cup milk
  • Salt and black pepper, to taste
  • 1 can Pillsbury Grands Biscuits

Directions

  1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, cook the sausage, breaking it up with a spatula, until browned and cooked through; remove from heat.
  3. In a medium bowl, whisk together the gravy mix and 1 cup of water until smooth.
  4. Pour the prepared gravy into the skillet with the cooked sausage, stir to combine, and simmer for 2–3 minutes until thickened.
  5. Remove the skillet from the heat and stir in the shredded cheddar cheese until melted and evenly combined.
  6. In a separate bowl, whisk together the eggs, milk, salt, and black pepper.
  7. Spread the sausage gravy mixture evenly into the prepared baking dish.
  8. Pour the egg mixture over the sausage layer.
  9. Open the can of Grands biscuits, cut each biscuit into quarters, and arrange the pieces evenly over the top of the casserole.
  10. Bake for 25–30 minutes, or until the biscuits are golden brown and the eggs are set.
  11. Let stand for a few minutes, then serve warm.

Tips

Cutting the biscuits into quarters instead of leaving them whole helps them bake through more evenly and gives you lots of golden, crispy edges on top.

If you want to prep ahead, cook the sausage gravy layer and mix the egg mixture the night before, then assemble with the biscuits in the morning right before baking so they stay fluffy.

FAQ

Can I use a different gravy mix?
Yes, any sausage or country gravy mix will work; just follow the water amount on the package if it differs.

Do I have to use Grands biscuits?
No, but they give a nice tall, fluffy topping. Regular refrigerated biscuits work too, just keep an eye on the bake time.

Can I make this a little lighter?
You can use turkey sausage, reduced-fat cheese, and 2% milk, but it will still be pretty hearty and comforting.

How do I know the eggs are set?
The center should no longer look liquid, and if you gently jiggle the dish, it should just have a slight wobble, not a runny center.

Does it reheat well?
Yes, reheat leftovers in the oven at 325°F or in the microwave. The biscuits are best reheated in the oven so they crisp back up a bit.
