Ingredients

- 1/2 cup (1 stick) softened unsalted butter
- One 8-oz package softened cream cheese
- 1 cup granulated sugar
- Zest of 1 lemon
- Juice of 1 lemon
- One 8-oz container whipped topping, thawed
- Two 3.4-oz boxes instant lemon pudding
- 3 cups cold milk
- One 8-oz container whipped topping (for top layer)
- Optional: chopped nuts, lemon zest, lemon slices
Directions
- Preheat oven to 350°F and spray a 13×9-inch baking dish.
- Combine flour, sugar, nuts, and butter; mix until combined.
- Press mixture into the dish and bake 15–18 minutes, until golden. Cool completely.
- Beat cream cheese and sugar until smooth.
- Stir in lemon zest, lemon juice, and whipped topping.
- Spread over cooled crust and chill 30 minutes.
- Whisk pudding mixes with cold milk until smooth.
- Spread over cream cheese layer and chill 15 minutes, or until set.
- Spread remaining whipped topping on top.
- Garnish as desired and chill at least 1 hour before serving.
