No Bake Coconut Cream Balls

These no bake coconut cream balls are soft, chewy, and loaded with rich coconut flavor in every bite. They come together in minutes with just a handful of pantry ingredients—perfect for when you want a sweet treat without turning on the oven. They’re great for holidays, potlucks, or as a quick dessert to keep in the fridge for the week. Roll them in extra coconut for a pretty, snowball look that’s ideal for gifting or serving on a dessert platter.

Ingredients:

  • 2 cups finely shredded unsweetened coconut (about 160 g), plus extra for rolling
  • 1 can (14 oz / 397 g) sweetened condensed milk
  • 2 tbsp unsalted butter, melted and cooled slightly (28 g)
  • 1/2 tsp vanilla extract (2–3 ml)
  • 1/4 cup finely chopped almonds or other nuts, optional (30 g)
  • Pinch of fine salt

Directions:
In a large bowl, stir together the shredded coconut, chopped nuts (if using), and a pinch of salt.
Add the sweetened condensed milk, melted butter, and vanilla extract to the bowl.
Mix with a spatula until everything is evenly combined and a sticky, scoopable dough forms.
Cover the bowl and chill the mixture in the fridge for about 20–30 minutes, until firmer and easier to roll.
Scoop out small portions (about 1 tbsp each) and roll between your palms to form smooth balls.
Roll each ball in extra shredded coconut to coat the outside completely.
Arrange the coconut balls on a plate or tray and chill for another 15–20 minutes to set before serving.
