Cheesy Mozzarella Chicken

This Cheesy Mozzarella Chicken is the ultimate comfort food, combining tender chicken with gooey mozzarella and a crispy Parmesan topping. The flavours come together beautifully, creating a satisfying and indulgent dish that’s perfect for family dinners or special occasions.

  1. Ingredients:
  • 4 boneless, skinless chicken breasts
  • 200g mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (optional for a crispy topping)
  • Fresh basil leaves (optional, for garnish)

Directions:

  1. Preheat your oven to 200°C (180°C fan) / 400°F. Grease a baking dish with a little olive oil or cooking spray.
  2. Cut a pocket in each chicken breast (be careful not to cut all the way through) and stuff each with a generous amount of mozzarella cheese.
  3. Season both sides of the chicken breasts with garlic powder, dried basil, dried oregano, salt, and pepper.
  4. Heat olive oil in a large ovenproof skillet over medium-high heat. Once hot, add the chicken breasts and cook for 2-3 minutes per side, until lightly browned.
  5. Sprinkle grated Parmesan cheese on top of each chicken breast and, if desired, add breadcrumbs for a crispy topping.
  6. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 75°C / 165°F) and the cheese is melted and bubbly.
  7. Garnish with fresh basil leaves before serving.
