The cake’s signature “earthquake” effect comes from the cream cheese mixture sinking and swirling through the cake as it bakes, creating delicious pockets of sweetness and texture.
Ingredients:
- 1 box (15.25 oz) chocolate cake mix (plus ingredients to prepare, typically water, eggs, and oil)
- 1 cup shredded coconut
- 1 cup chopped pecans or walnuts (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
Directions:
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.
- Prepare the chocolate cake mix according to the package instructions. Pour the batter into the prepared baking dish and spread it evenly.
- Sprinkle the shredded coconut and chopped pecans (if using) evenly over the cake batter.
- In a medium bowl, beat the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
- Drop spoonfuls of the cream cheese mixture onto the top of the cake batter. Do not spread it out – it will naturally swirl during baking.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean (you may hit a gooey spot due to the cream cheese filling, but the cake should still be set).
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Once cooled, slice and serve.
