Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup heavy cream
- 1 1/2 cups mini chocolate chips
- 1 cup coarsely chopped chocolate chip cookies (like chocolate chip cookies)
- 1/4 cup powdered sugar
Directions:
- Preheat oven to 325°F (165°C). Grease and line a 9-inch springform pan with parchment paper.
- In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
- Press the mixture into the bottom of the prepared pan to form the crust. Bake for 10-12 minutes, then remove from the oven and cool completely.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Add the vanilla extract and eggs, one at a time, beating after each addition. Mix until fully incorporated.
- Add the sour cream and heavy cream, and beat until smooth.
- Gently fold in the mini chocolate chips and chopped chocolate chip cookies, making sure they are evenly distributed throughout the batter.
- Pour the cheesecake batter into the cooled crust, spreading it into an even layer.
- Bake for 50-55 minutes, or until the center is almost set (it may still have a slight wobble).
- Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly ajar.
- Remove the cheesecake from the oven and let it cool completely at room temperature. Refrigerate for at least 4 hours or overnight before serving.
- Before serving, dust with powdered sugar and top with additional chocolate chips or cookie crumbs if desired.
