- Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup bourbon
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 2 tablespoons apple cider vinegar
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- 1/2 teaspoon crushed red pepper flakes (optional for heat)
- 1 tablespoon cornstarch (for thickening)
- 1 tablespoon water
- Green onions, chopped for garnish
- Steamed rice for serving
- Place the chicken breasts in the bottom of your slow cooker.
- In a medium bowl, whisk together the bourbon, soy sauce, brown sugar, ketchup, apple cider vinegar, minced garlic, ground ginger, and red pepper flakes. Pour the sauce over the chicken breasts in the slow cooker.
- Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
- Once the chicken is done, remove it from the slow cooker and shred it with two forks.
- In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the sauce in the slow cooker and cook on high for 10-15 minutes until the sauce thickens.
- Return the shredded chicken to the sauce and stir to coat. Serve the bourbon chicken over steamed rice and garnish with chopped green onions.
