- Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then cook them in the skillet for 6-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
- Stir in the rice, ensuring it is well coated with the oil and onion mixture.
- Add the chicken broth, heavy cream, Parmesan cheese, thyme, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low.
- Return the chicken to the skillet, placing it on top of the rice. Cover the skillet and simmer for 18-20 minutes, or until the rice is cooked through and the liquid has been absorbed.
- Remove the skillet from heat and let it sit for 5 minutes before serving. Garnish with chopped fresh parsley.
