Garlic Tomato Baked Chicken is a flavorful and comforting dish featuring tender chicken breasts baked in a rich, savory garlic and tomato sauce. Ingredients:

  • 4 boneless, skinless chicken breasts
  • 3 large tomatoes, diced
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil for garnish

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together the diced tomatoes, minced garlic, olive oil, dried basil, oregano, garlic powder, salt, and pepper.
  3. Place the chicken breasts in a baking dish and season with salt and pepper.
  4. Spoon the tomato and garlic mixture over the chicken breasts, making sure they are well covered.
  5. Bake the chicken for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. During the last 5 minutes of baking, sprinkle shredded mozzarella cheese over the chicken and return to the oven until the cheese is melted and bubbly.
