Bacon Mushroom Pork Chops

Ingredients:

  • 4 bone-in pork chops (about 1-inch thick)
  • 4 slices of bacon, chopped
  • 8 oz mushrooms, sliced (cremini or button)
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Season the pork chops with salt, pepper, and thyme. Set aside.
  2. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the skillet.
  3. In the same skillet, add olive oil if needed, then add the pork chops. Sear for 4-5 minutes on each side until browned. Remove the chops and set aside.
  4. In the skillet, add the sliced onions and mushrooms. Sauté for 5-7 minutes until the onions are translucent and the mushrooms are tender. Stir in the minced garlic and cook for an additional minute.
  5. Return the pork chops to the skillet, along with the crispy bacon. Pour in the chicken broth and bring to a simmer.
  6. Cover the skillet and cook on low heat for about 15-20 minutes, or until the pork is cooked through and reaches an internal temperature of 145°F (63°C).
  7. Garnish with fresh parsley before serving.
