Mexican Casserole

Ingredients:

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups cooked rice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Directions:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef or turkey. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
  4. Stir in the black beans, corn, diced tomatoes, cooked rice, cumin, chili powder, salt, and pepper. Mix well and heat through.
  5. Pour half of the salsa into the bottom of the prepared baking dish. Spread half of the meat mixture over the salsa, then sprinkle half of the cheese on top.
  6. Repeat the layers with the remaining salsa, meat mixture, and cheese.
  7. Cover with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  8. Let cool for a few minutes before garnishing with fresh cilantro and serving.
