Flaky Apple Pie Bars

Ingredients:

For the crust:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter, chilled and cubed
  • 1/4 to 1/2 cup ice water

For the apple filling:

  • 4 cups apples, peeled, cored, and sliced (about 4-5 medium apples)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For the topping:

  • 1/4 cup rolled oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Directions:

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together.
  3. Divide the dough in half. Roll out one half and press it into the bottom of the prepared baking dish.
  4. In a separate bowl, toss the sliced apples with granulated sugar, cinnamon, lemon juice, and cornstarch until well coated. Spread the apple mixture over the crust.
  5. Roll out the second half of the dough and place it over the apple filling. Cut slits for steam to escape.
  6. In a small bowl, combine oats, brown sugar, cinnamon, and melted butter. Sprinkle this mixture over the top crust.
  7. Bake for 40-45 minutes, or until the apples are tender and the crust is golden brown. Let cool before cutting into bars.
