Goulash with Broccoli and Rice

Ingredients:

For the Goulash:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth
  • 2 cups elbow macaroni
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)

For the Broccoli:

  • 4 cups broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For Serving:

  • 1 package (12 rolls) Hawaiian sweet rolls

Directions:

  1. Cook the Goulash:
    • In a large pot or skillet, brown the ground beef over medium heat. Drain excess fat.
    • Add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are tender, about 5 minutes.
    • Stir in the diced tomatoes, tomato sauce, beef broth, elbow macaroni, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring to a boil.
    • Reduce heat, cover, and simmer for about 20 minutes, or until the macaroni is tender, stirring occasionally. If desired, stir in the shredded cheddar cheese until melted.
  2. Prepare the Broccoli:
    • While the goulash is simmering, steam the broccoli in a pot or microwave until bright green and tender, about 4-5 minutes. Drizzle with olive oil and season with salt and pepper.
  3. Serve:
    • Serve the goulash hot, alongside steamed broccoli and warm Hawaiian rolls.
