Ground Beef with Potatoes

Ingredients:

  • 1 lb ground beef
  • 3 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup beef broth (optional)
  • 2 tablespoons fresh parsley, chopped

Directions:

  1. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart, until browned. Drain any excess fat.
  2. Add the chopped onion and garlic to the skillet, and cook for 2-3 minutes until the onion is translucent.
  3. Stir in the diced potatoes, paprika, cumin, salt, and black pepper. Cook for 10-15 minutes, stirring occasionally, until the potatoes are tender.
  4. If the mixture becomes too dry, add the beef broth and simmer for a few more minutes until everything is well combined and the potatoes are fully cooked.
  5. Garnish with fresh parsley and serve hot.
