Cracker Barrel Meatloaf

Ingredients:

  • 1 1/2 pounds ground beef
  • 1/2 pound ground pork
  • 1 small onion, finely diced
  • 1/2 cup bell pepper, diced
  • 1 cup crushed Ritz crackers
  • 1/2 cup shredded cheddar cheese
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Topping:

  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, ground pork, diced onion, bell pepper, crushed crackers, shredded cheddar, eggs, milk, ketchup, Worcestershire sauce, salt, and pepper. Mix everything until well combined, but do not overwork the meat.
  3. Shape the mixture into a loaf and place it in a greased loaf pan or on a lined baking sheet.
  4. In a small bowl, mix together the topping ingredients (ketchup, brown sugar, and mustard) until smooth. Spread this glaze over the top of the meatloaf.
  5. Bake for 60-70 minutes, or until the internal temperature reaches 160°F (70°C).
  6. Remove from the oven and let it rest for 10 minutes before slicing and serving.
