Chocolate Rice Krispie Balls

  1. Ingredients:
    • 4 cups Rice Krispies cereal
    • 1 cup semi-sweet chocolate chips
    • 1/2 cup creamy peanut butter
    • 1/4 cup honey or corn syrup
    • 1 teaspoon vanilla extract
    • 1/2 cup powdered sugar (for rolling)
    Directions:
    1. In a microwave-safe bowl, combine the chocolate chips, peanut butter, and honey. Microwave in 30-second intervals, stirring in between, until melted and smooth.
    2. Remove from the microwave and stir in the vanilla extract.
    3. In a large mixing bowl, add the Rice Krispies cereal. Pour the melted chocolate mixture over the cereal and stir until evenly coated.
    4. Allow the mixture to cool slightly, then use your hands to form small balls, about 1 inch in diameter.
    5. Roll each ball in powdered sugar to coat. Place the coated balls on a parchment-lined baking sheet.
    6. Refrigerate for at least 30 minutes to set before serving.
