- Ingredients:
- 1 pound ground beef
- 1/2 pound ground pork (optional)
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 2 cans (15 oz each) diced tomatoes with green chilies
- 1 can (8 oz) tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions
- In a large pot, brown the ground beef and ground pork (if using) over medium heat. Drain excess fat.
- Add the chopped onion and bell pepper to the pot and sauté until soft, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, paprika, salt, and pepper. Stir well to combine.
- Bring the chili to a boil, then reduce the heat and let simmer for 30-45 minutes, stirring occasionally.
- Serve hot, topped with cheese, sour cream, and green onions if desired.
