- Ingredients:
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup corn kernels (fresh or canned)
- 1/2 cup buttermilk
- 1 egg
- Oil for frying
- In a mixing bowl, combine the cornmeal, flour, baking powder, salt, and pepper.
- In another bowl, whisk together the buttermilk and egg. Add the corn kernels and stir to combine.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
