Crispy Golden Corn Nuggets

  1. Ingredients:
    • 1 cup cornmeal
    • 1/2 cup all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 cup corn kernels (fresh or canned)
    • 1/2 cup buttermilk
    • 1 egg
    • Oil for frying
    Directions:
    1. In a mixing bowl, combine the cornmeal, flour, baking powder, salt, and pepper.
    2. In another bowl, whisk together the buttermilk and egg. Add the corn kernels and stir to combine.
    3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
    4. Heat oil in a deep skillet or fryer to 350°F (175°C).
    5. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
