Creamy Potato & Hamburger Soup

  1. Ingredients:
    • 1 pound ground beef
    • 1 medium onion, chopped
    • 3 cloves garlic, minced
    • 4 cups potatoes, peeled and diced
    • 4 cups beef broth
    • 1 cup heavy cream
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 teaspoon dried thyme
    • 1 cup shredded cheddar cheese (optional)
    • Fresh parsley for garnish
    Directions:
    1. In a large pot over medium heat, brown the ground beef with the chopped onion until the meat is no longer pink. Drain excess fat.
    2. Add the minced garlic and cook for an additional minute until fragrant.
    3. Stir in the diced potatoes, beef broth, salt, pepper, and thyme. Bring to a boil, then reduce heat and let simmer for 15-20 minutes, or until the potatoes are tender.
    4. Stir in the heavy cream and cheese (if using) and heat through.
    5. Serve hot, garnished with fresh parsley.
