Mexican Chicken Pinwheels

Ingredients:

  • 2 cups shredded cooked chicken
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese
  • 1/2 cup black olives, sliced
  • 1/4 cup green onions, chopped
  • 4 large flour tortillas
  • 1 teaspoon taco seasoning
  • Optional: fresh cilantro for garnish

Directions:

  1. In a mixing bowl, combine shredded chicken, softened cream cheese, salsa, taco seasoning, cheddar cheese, black olives, and green onions. Mix until well blended.
  2. Lay a tortilla flat on a clean surface. Spread a generous amount of the chicken mixture evenly over the tortilla.
  3. Roll the tortilla tightly from one end to the other. Repeat with remaining tortillas and filling.
  4. Once rolled, slice each tortilla into 1-inch pinwheels.
  5. Arrange pinwheels on a serving platter and garnish with fresh cilantro if desired. Serve immediately or refrigerate until ready to serve.
