Peanut Butter Cookies

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Optional:

  • 1/4 cup chopped peanuts or chocolate chips for extra texture

Directions:

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together the peanut butter, unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  5. Scoop the dough into 1-inch balls and place them on the prepared baking sheets. Use a fork to press the balls down, creating a crisscross pattern.
  6. Bake for 10-12 minutes or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
  7. Enjoy with a cold glass of milk or as a sweet afternoon snack!
