Crockpot Chicken & Stuffing

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 boxes (6 oz each) stuffing mix (like Stove Top)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 ½ cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 cups frozen mixed vegetables (optional)
  • 1/4 cup unsalted butter, melted

Directions:

  1. Lightly grease the crockpot with cooking spray.
  2. Place the chicken breasts in the bottom of the crockpot. Sprinkle with garlic powder, onion powder, black pepper, and thyme.
  3. In a bowl, combine the stuffing mix, cream of chicken soup, cream of mushroom soup, chicken broth, and melted butter. Mix well.
  4. Spread the stuffing mixture evenly over the chicken breasts. If using, add the frozen vegetables on top of the stuffing mixture.
  5. Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through (internal temp of 165°F).
  6. Once done, fluff the stuffing with a fork, slice the chicken, and serve warm.
