Old Fashioned Fudge

Ingredients:

  • 2 cups granulated sugar
  • 3/4 cup whole milk
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • Optional: 1/2 cup chopped nuts (walnuts or pecans)

Directions:

  1. Grease an 8×8-inch pan and line it with parchment paper for easy removal.
  2. In a medium saucepan, combine granulated sugar, milk, butter, salt, and cocoa powder. Stir over medium heat until the sugar dissolves.
  3. Bring the mixture to a boil without stirring, and let it cook for 5-7 minutes until it reaches 234°F (112°C) on a candy thermometer.
  4. Remove from heat and stir in the vanilla extract. Let it cool undisturbed until the temperature drops to around 110°F (43°C).
  5. Once cool, beat the mixture vigorously with a wooden spoon for about 5 minutes until it thickens and loses its gloss.
  6. Quickly fold in the powdered sugar and any optional nuts.
  7. Pour the fudge into the prepared pan, spreading it evenly.
  8. Let it set at room temperature for at least 2 hours or refrigerate until firm.
  9. Slice into squares and enjoy!
